Bittersweet Dark Iced Cocoa

Extra virgin olive oil is the juice of the olive fruit. In its natural state, it is bitter and sometimes peppery. Varying intensity of bitter (and pepperiness) also tells us the varietal of olives the oil is made of.

How to make this.
1 cup chilled oat milk, unsweetened
1 1⁄2 tbsp 100% dark cocoa powder, unsweetened
1 tsp raw sugar
1 tsp Olivo Estate
Blend well in a blender or juicer.
Pour over glass of ice and sprinkle with a little cocoa powder on top.
Garnish with a large sprig of fresh mint.
Variation – blend in a sprig of fresh mint for a burst of refreshing green aroma.
Tips:
Make sure to use cocoa powder of at least 85% cocoa content.
Recipe tastes best with plant-based milk – make sure to check sweetness of the milk and adjust sugar as needed.
